This year, Canada sparkles on the international culinary stage as Ladurée executive pastry chef Alexandra Launay snatches the prestigious title in Ladurée’s renowned Yule Log competition. Launay’s creation, the Plume Blanche Yule Log, stands as a breathtaking testament to her artistry and dedication to pastry. Set with delicate white chocolate petals, the graceful Plume Blanche Yule Log is a tribute to refinement and lightness.
Crafted with a stunning combination of flavours and textures, the Plume Blanche features a delicate vanilla Joconde biscuit that serves as the base, crowned with a luscious almond and combava crisp, which adds an intriguing crunch. Inside, the symphony continues with a velvety almond cream layered atop a vibrant raspberry jelly, all harmoniously blended with Ladurée’s exquisite rosé champagne. Topping off this masterpiece is a creamy vanilla mascarpone mousse, elegantly adorned with delicate white chocolate petals.
The Plume Blanche Yule Log is part of Ladurée’s Christmas yule log collection which is presented in Maison Ladurée’s signature flavours including Ispahan, chocolate caramel hazelnut, and pistachio.
Individual servings are priced at $13.50 and will be available daily for pick-up in-store at Ladurée boutiques from December 3, while the large yule logs serving six to eight people are priced at $98 and will be available for pre-order now through December 14.
