This May, Silent H presents a rare, two-night culinary collaboration with Chef Rodrigo Rivera-Río of Koli Cocina de Origen, the Michelin-recognized restaurant in Monterrey and one of Mexico’s most celebrated dining destinations.

Taking place May 6 and 7, 2026, the experience brings together Chef Gerardo Álvarez and Chef Rodrigo Rivera-Río for an intimate eight-course tasting menu shaped by shared origins and distinct culinary paths.

Each chef will present four courses from their own kitchen, served side by side. Rather than fusion, the evening is structured as a dialogue, two perspectives shaped by Northern Mexico, expressed through fire, memory, restraint, and a deep respect for ingredient and land.

Chef Gerardo Álvarez grew up between movement and fire, long Sundays, a large family, and cooking as ritual and necessity. While studying at Kendall College in Monterrey, he first encountered the work of Chef Rodrigo Rivera-Río, an influence that remained with him.

Chef Rodrigo Rivera-Río was raised in Hidalgo, Nuevo León, on working ranch land where soil, season, and producer were inseparable from daily life. That grounding became the foundation of Koli Cocina de Origen, the Michelin-recognized restaurant he built in Monterrey to honour the gastronomy of Mexico’s northeast.

Years later, Gerardo brought that same Northern Mexican instinct to Toronto through Silent H, where cooking is guided not by reinvention, but by memory.

This May 2026, that early admiration returns to the table.

Chef Rivera-Río travels to Toronto for two nights only. Eight courses between them, four from each kitchen, each remaining true to its own voice. No fusion. No compromise. Just two chefs shaped by a shared landscape, meeting again in a different city.

Timed just after Cinco de Mayo, the collaboration offers a contemporary lens into Mexican cuisine, its regional depth, lineage, and growing presence on the global stage.
