Glenfiddich, the world’s most awarded single malt Scotch whisky, partners with Hawthorn Dining Room, of the Fairmont Palliser in Calgary, Alberta, for an exclusive Glenfiddich Grand Series dinner, bringing together the art of modern gastronomy and the mastery of whisky-making.  

Hosted by Jamie Johnson, Glenfiddich’s Canadian National Brand Ambassador, the seven-course dinner showcased Hawthorn’s inventive culinary craftsmanship, each course thoughtfully paired with some of Glenfiddich’s most distinguished single malts, including the Glenfiddich 16 Year Old Aston Martin Formula One™ Team Limited Edition and the exceptional Glenfiddich 30 Year Old Suspended Time, amongst other coveted Glenfiddich single malts.

Set within the grandeur of the Fairmont Palliser, Hawthorn Dining Room and Bar embodies a balance of history and reinvention—echoing the same duality that defines Glenfiddich’s Grand Series. The establishment is known for its iconic and unexpected approach to cuisine, offering a boldly modern interpretation of authentic prairie flare, intermingled with the elegance of the Fairmont. The restaurant was named one of OpenTable’s Top 100 Restaurants in Canada in 2023 and was recognized with a Diners’ Choice Award in 2024, a testament to its unwavering commitment to iconic fare and hospitality.  

The evening led guests through a seven-course dinner artfully paired with some of Glenfiddich’s most coveted single malts. The dinner commenced with a Chef’s amuse of Cajun-baked East Coast oysters, paired with the newly released Glenfiddich 16 Year Old limited-edition, followed by the first course of arugula with spiced ricotta, citrus vinaigrette, prosciutto, caramelized fig, and toasted almonds, paired with Glenfiddich’s small-batch 18 Year Old. The next course followed with pan-roasted branzino, paired with Glenfiddich 21 Year Old Gran Reserva. The following course delighted guests with braised beef short rib with celeriac, cabbage, farro, mushrooms and porcini jus, paired with Glenfiddich 23 Year Old Grand Cru. Dinner concluded with a spiced banana cream tart paired with Glenfiddich 26 Year Old Grande Couronne, and a 26 Year Glenfiddich Apple Chouquette.  

A highlight of the special dinner event included a tasting of the Glenfiddich Suspended Time 30 Year Old, a rare and collectible single malt from Glenfiddich’s Time Re-Imagined Series, one of the distillery’s most exceptional releases.
