Fresh off Culinary World Cup gold medal, Chef Warren Chow leads the kitchen of new West Point Grey restaurant

The fresh, rugged spirit of the West Coast will be front and centre this February when Wildlight Kitchen + Bar opens its doors in West Point Grey under the culinary helm of homegrown talent, ChefWarren Chow.

The approachable, premium-casual concept will celebrate the diversity of the province’s West Coast cuisine with modern, regional, all-day dishes, select B.C. wines, handcrafted cocktails and weekend brunch. It’s a perfect fit for Chef Chow, who is trained in traditional French cuisine, but specializes in using modern techniques and local flavours. Fresh off a gold medal win at the ExpoGast 2022 Culinary World Cup in November with Team Canada, Chow is ready to put it all together with the new West Coast brasserie located on University Boulevard.

“There is something so special about the freshness of the air, the quality of the light, and the rugged abundance here on the West Coast,” said Chow. “Wildlight is about harmoniously bringing together the land, sea and sky, and showcasing nature’s bounty.” 

Thoughtfully constructed and deeply satisfying, Chow’s dishes focus on sustainable regional and seasonal ingredients, including produce from nearby UBC Farm, fresh Pacific seafood, and ethically raised meat. Highlights include the Wildlight pescatarian charcuterie board, laid with housemade salmon pastrami, beet-cured ling cod, marinated Salt Spring Island Mussels, smoked albacore tataki, cod rillette, pickled sea asparagus, warm olives, rye, poppadom and nori crackers; the Wildlight burger, with dry-aged, grass-fed Two Rivers beef, thick-cut bacon, aged white-cheddar, fried onions, tomato jam and smoked onion aioli on a poppy seed bun; seared Hokkaido scallops with truffle risotto; miso koji Gindara Sablefish with soba noodles, glazed baby bok choy, edamame, dashi consommé; tomahawk steak; Rossdown Farms chicken; Fraser Valley duck; and more. The all-day menu is paired with a beverage program that features creatively crafted libations with ingredients from local producers, as well as an extensive selection of the best of B.C. wines, available by the glass or bottle. Wildlight also offers daily and late-night happy hours as well as weekend brunch.

Darrell Jones, president of Pattison Food Group, who enters its first restaurant venture with this concept, expressed his excitement about the opening of Wildlight Kitchen + Bar:
