Spirit of the West Coast: Wildlight Kitchen + Bar Welcomes Sheringham Distillery for Exciting Collaboration Dinner

An adventurous evening awaits as the acclaimed Wildlight Kitchen + Bar teams up with highly respected BC-based distillers, Sheringham Distillery, for an exclusive collaborative event showcasing Sheringham’s premium spirits paired with the signature West Coast flavours that distinguish Wildlight.

This exciting dinner takes place on Sunday, April 28, 2024 at 5:30 p.m., as Wildlight Bar Manager Aman Nijjar – recently nominated for Best Bartender in The Georgia Straight’s Golden Plates Awards – and 2023’s MICHELIN Young Chef Award winner Chef Warren Chow welcome Jason and Alayne MacIsaac, co-founders of Sheringham Distillery who took home the World’s Best Contemporary Gin Award. Taking a culinary approach to crafting cocktails, Nijjar makes as many components in-house as possible to highlight local West Coast ingredients. 

The evening will begin with a welcome cocktail reception on Wildlight’s covered patio with action food stations serving Tortellini de Pollo with a Sheringham Vodka Sauce and Tomato Negroni Gazpacho. To follow, Chef Warren has created a unique five-course menu just for this night with Sheringham spirits infused into each dish including such delights as Braised Short Rib with a Sheringham Chocolate Liqueur mole sauce and gin-infused Scallop Crudo.

Anchored by Wildlight’s signature cocktail, the Kazuki Sour, which features Sheringham Beacon Gin, guests will delight in a cocktail menu that also features Sheringham’s Seaside Gin, Raincoast Gin, Akvavit, Vodka, Rhubarb Gin Liqueur, Lemon Gin Liqueur, Coffee Liqueur, Sirene Chocolate Liqueur, and also the newly released and much anticipated Sheringham Whisky. Non-alcoholic cocktail pairings will also be available, showcasing the entire lineup from Lumette Alt Spirits, Sheringham Distillery’s sister company, featuring London Dry, LumRum, and Bright Lights all of which are made using all-natural flavors and premium botanicals.

“On my very first day working in this industry, I was introduced to Sheringham and ever since have been inspired by how they source local ingredients, and combine flavours unique to the West Coast and Vancouver Island,” explains Nijjar. “I have been fortunate over the last year to get to know Jason, Alayne, and the whole Sheringham team, and it has been a dream come true to be able to collaborate with them on this special dinner as their spirits are the perfect complement to Wildlight’s cuisine.”
